猪肋排骨的通电加热试验研究

【摘要】 本文利用浸泡式通电加热装置,对不同浓度(0.01mol/L、0.02mol/L、0.03mol/L和0.05mol/L)的NaCl溶液及自来水中的单根猪肋排骨试样在电场强度为1500V/m下进行了通电加热试验,研究了猪肋排骨长轴方向对加热速率的影响,并与传统加热方式进行了对比。试验结果表明:通电加热时试样的加热速率显著高于传统加热时试样的加热速率;在通电加热条件下,当NaCl溶液的浓度为0.05mol/L时,试样表面肉的温度略高于溶液的温度,而试样其它各部分的温度低于溶液的温度,并且试样中部骨髓中心的温度最低。但是,在其它浓度下,试样各处的温度均高于溶液的温度,并且试样两不同截面上相同半径处的加热速率基本相同。试验还发现,试样长轴平行于电场方向时的加热速率高于试样长轴垂直于电场方向时的加热速率,并且加热槽内试样与溶液的混合物的电导率与温度仍然呈线性关系,但试样长轴平行于电场方向时的电导率高于试样长轴垂直于电场方向时的电导率。

【Abstract】 In this paper, the ohmic heating experiments for processing a single short rip of hog were performed with an ohmic heating device. The samples were respectively submerged with the different concentrations of NaCl solution (0.01 mol/L、0.02 mol/L、0.03 mol/L and 0.05 mol/L) and tap water at 1500 V/m of the electrical field strength. The effect of the long axis direction of short rip of hog on the heating rate was investigated, and compared with the traditional processing method. The results showed that the heating rate of ohmic heating was significantly higher than that of the traditional method. When the concentration of NaCl solution was 0.05mol/L, the temperature of the surface of the samples slightly higher than that of the solution, but the temperature of other parts of the sample was lower than that of solution, and the temperature of the bone marrow center in the long axis of the sample was the lowest. However, when the solution concentration was else, the temperature of every point in the sample was higher than that of the solution, and when the points in the sample was at same radius, the heating rate of the point in the sample was almost same in spite of the different section. The results also showed that the heating rate of the sample with the long axis parallel to the electric field was higher than that when the long axis of the sample vertical to the electric field, in addition, the electrical conductivity of the mixture (the sample and the solution) linearly increased with the increase in the temperature, however, the electrical conductivity of the sample with the long axis parallel to the electrical field was higher than that with the long axis vertical to the electrical field.
