【摘要】 切分去核是核果类水果加工过程的一道重要工序,在生产罐头、果干、果脯和速冻果肉等加工制品中,要求沿杏果实的缝合线将水果一分为二切开,去核后的果瓣保持完整状态。为实现食品加工工艺要求,在加工过程中需要先对杏果实进行定向,使切割刀具准确地沿着杏果实的缝合线一周将果实切开。本文对定向后杏果实的切分去核机理进行了研究,在对圆盘刀和浮动切割护条构成的切割装置中的水果作运动和力学分析的基础上,确定了切分去核工作部件的运动参数和结构参数,为杏切分去核设备的整机设计提供了科学依据。更多还原

【Abstract】 Cutting and pitting is a very important process for stone fruit. Some finished fruit product such as can ,dried fruit , preserved fruit and quick-freezing fruit, It’s required separate the fruit into two parts along the fruit suture line and keep the fruit piece completely. In order to get the fruit process requirement . Fruit must be oriented before the cutter disk separate the fruit into two parts along the suture line circle accurately. Stoning and pitting mechanism has been studied in this paper. Under the foundation of analysis of the fruit movements and mechanism between the disc cutting and floating protection bar which composite the cutting device. The movement and structure parameters of stoning and pitting parts can be assured. It’s provide scientific foundation for future stoning and pitting machine design.更多还原
