多矿物元素分析在羊肉产地溯源中的应用

【摘要】 【目的】通过分析不同地域来源羊肉中矿物元素组成差异,初步探讨利用多矿物元素进行羊肉产地来源判别的可行性,筛选有效的溯源指标。【方法】分别从中国内蒙古自治区阿拉善盟、锡林郭勒盟和呼伦贝尔市三个牧区、重庆市和山东省菏泽市两个农区共采集了99个羊肉样品,利用等离子体质谱仪(ICP-MS)测定了脱脂羊肉样品中25种矿物元素的含量,并结合主成分分析(PCA)和线性判别分析(LDA)等多元统计方法进行了数据分析。【结果】脱脂羊肉中矿物元素含量具有明显的地域特征。Be、Na、Al、Ca、V、Cr、Mn、Fe、Co、Ni、Cu、Zn、As、Se、Ag、Sb、Ba、Tl、Pb、Th和U21种元素含量在五个地区间差异显著,逐步判别分析筛选出Be、Na、Cr、Mn、Fe、Ni、Cu、Zn、As、Sb、Ba和V12种元素作为羊肉产地来源的判别指标,所建立的判别模型对样品总体的正确判别率和交叉检验率分别为93.9%和88.9%,其中重庆市、菏泽市和阿拉善盟的样品均100%正确归类。此外,农区和牧区的羊肉样品能够被完全区分开。【结论】多矿物元素分析是进行羊肉产地溯源的有效技术手段。

【Abstract】 【Objective】This paper is to preliminary investigate the feasibility of multi-element analysis in determination of the geographical origin of mutton,and to select the effective tracers in mutton origin assessment. 【Method】 25 element contents of 99 mutton samples from three pastoral areas including Alxa League,Xilin Gol League and Hunlunbuir City, and two agricultural areas including Chongqing city and Heze city of China were analyzed by ICP-MS. The multivariate statistical analysis such as principal component analysis (PCA) and Linear Discriminate analysis (LDA)were used to assess its applicability as a tool for authentication of the geographical origin of mutton. 【Result】21 elements of Be, Na, Al, Ca, V, Cr, Mn, Fe, Co, Ni, Cu, Zn, As, Se, Ag, Sb, Ba, Tl, Pb, Th and U in defatted mutton showed significant differences. Be、Na、Cr、Mn、Fe、Ni、Cu、Zn、As、Sb、Ba and V12 elements were selected by LDA to establish the classification model and gave an overall correct classification rate of 93.9% and cross-validation rate of 88.9%. 100% correct classification were obtained for samples from Chongqing, Heze and Alxa League. In addition, mutton from agricultural areas can be totally distinguished with that from pastoral areas. 【Conclusion】The results demonstrate the availability of multi-element fingerprints as indicators to authenticate geographical origins of mutton.
