【Abstract】 Compared with the wheat protein which has the same amino acid composition of wheat peptides,wheat peptides have many unique physico-chem-ical,and bioactive characteristics.At present,multiplcate purified bioactive peptides have been separated from wheat protein,such as antihypertensive peptides,exorphin,analgesic peptides,ect.The research advance of wheat bioactive peptides was summarized in this paper to offer relative references for further research and application of wheat bioactive peptides.更多还原
