进口油脂氢化催化剂的催化活性及氢化过程中油脂反式酸含量变化
Study on Catalytic Activity of Imported Oil Hydrogenation Catalyst and the Change Content of Trans Fatty Acid in Hydrogenated Edible Oils

【摘要】 通常情况下液态油脂中反式脂肪酸(TFA)质量分数较低,固态油脂中反式脂肪酸质量分数较高,平均占总脂肪30%左右,如大豆油、色拉油和人造奶油中反式脂肪酸含量一般在5%~45%之间,最高可达65%。一直以来,反式脂肪酸被认为是重要不饱和脂肪酸的之一,但是反式脂肪酸对人体的健康却是有害的。研究表明:TFA能增加低密度脂蛋白胆固醇,降低对人体有益高密度脂蛋白胆固醇,增加肥胖病、心脏病的发生几率;它还可能导致肿瘤(乳腺癌);TFA经胎盘转运给胎儿,通过干扰必需脂肪酸代谢、抑制必需脂肪酸功能而干扰婴儿生长发育。
【Abstract】 Usually liquid fats containing less trans fatty acids,but the solid fats containing more trans fatty acids,on average about 30%of total fat,such as in soybean oil,salad oil and margarine trans fatty acid content is generally between 5%~45%,up to 65%.We always believe that trans fatty acids are impotant substances—an unsaturated fatty acid,However,trans fatty acids are harmful to the human body’s health. Studies have shown that TFA can increase low-density lipoprotein cholesterol,reduct the beneficial high-density lipoprotein cholesterol,Increase the risk of obesity,heart disease;It can also cause cancer(breast cancer); TFA transfer to the fetus through the placenta,by interfering with the metabolism of the essential fatty acids, Inhibit the function of essential fatty acids interfere with infants growth and development.
