不同品种丝胶蛋白对酪氨酸酶活性的抑制作用

【摘要】 丝胶蛋白质是具有多种独特功能的蛋白质,在食品、化妆品、纤维加工、细胞工程、医用材料等领域具有重要利用价值。本研究采用提取分离法从土豆中提取酪氨酸酶,并以多巴为底物,运用酶活性测定法研究不同品种不同浓度的丝胶蛋白对土豆酪氨酸酶活性的抑制作用。结果表明,丝胶蛋白对土豆酪氨酸酶的活性有不同程度的抑制作用,其中浓度为10.0mg/ml绿S丝胶蛋白对酪氨酸酶活性的抑制作用最大,抑制率为18.30%。
【Abstract】 Sericin is a variety of unique features of proteins, in food, cosmetics, fiber processing, cellular engineering, medical materials, and other fields important value in use. Tyrosinase was extracted from potato and its activity inhibited by different kinds of sericin silkworm strain wasspectrophotometrically analyzed using L-dopa as substrate. Results showed that sericin protein on potato tyrosinase activity have different degrees of inhibition, and the concentration of inhibition of 10 mg/ml green S sericin on tyrosinase activity, the inhibition rate was 18.30%.
