【摘要】 饮食文化的物质基础是农业产品,追根溯源,不能不受农业的影响。但农业对饮食文化的影响是潜在的,在农业生产领域和饮食文化领域都容易被忽视。本文试图从传统农业和现代农业对饮食文化的潜在影响作初步的分析。传统农业方面,古今农作物和家畜种类的增加或消失,对饮食文化都有潜在影响;现代农业则通过传统农业作物或家畜资源的丧失造成对饮食文化的潜在影响。此外,现代化农业的新成就如反季节、反农时,也对饮食文化带来潜在影响。这是就国内而言。从中西农业结构的差异来看,肉食种类爱好的差异、吃食野生动物观念的差异,都导致中西饮食文化观念的差异甚至冲突。所以怎样正确看待中西饮食观念的差异和冲突,也是饮食文化研究中面临的一个新问题。更多还原

【Abstract】 Tradtional and modern agriculture possesses latent influence on the dietary culture,which has been neglected by the dietary research work.the latent influence of tradional agricuture on the dietary culture includes the increase or decrease of crop and livestock kinds,while the latent influence of modem agriculture shows in the genetic erosion of resources,and the problems of anti- season as well as anti- farming season.In addition,the East- West exchange of dietary culture brings the ideological difference or even to the extent of conflict between China and the West.How do we look upon this problem is a new task from now on.更多还原
