新捕获、批发和零售养殖大黄鱼鲜度与细菌种群

【摘要】 对大黄鱼栖息水域海水的卫生状况以及新捕获、批发和零售大黄鱼鲜度进行评价,同时结合表现型和基因型方法对的细菌种群进行定性和定量研究。结果表明,海水温度(10.8~27.9)℃、盐度(25.1~32.8)‰,海水粪大肠菌群在<20~2800个/L之间,23份海水样品中,粪大肠菌群达标率为95.7%;新捕获、批发、零售环节的大黄鱼鲜度总体呈下降趋势,TVBN、菌落总数和假单胞菌数呈上升趋势。细菌种群结果显示,新捕获、批发和零售样品中革兰氏阴性菌为优势菌群,分别占75.4%、72.8%和87.5%。新捕获鱼细菌种类繁多,共检出20种细菌,主要由肠细菌科、假单胞菌属、腐败希瓦氏菌和嗜麦芽窄食单胞、玫瑰小球菌等组成。批发和零售环节样品细菌种群逐渐变得简单,分别检出17种和11种细菌,其中不动细菌属、假单胞菌属、腐败希瓦氏菌、嗜冷杆菌等得以生存和繁殖,所占比例较高。

【Abstract】 Hygiene condition in the culture seawater and freshness of cultured Pseudosciaena crocea during newly caught,wholesale and retail sale stages were carried out,and then the bacteriological species were also quantitatively and qualitatively studied.The results showed that the temperatures,salinities and Fecal coliforms(FCB) in culture sea water were(10.8~27.9) degree,(25.1~32.8)%o and<20~2800 per liter, respectively.The ratios to the par of FCB in 23 seawater samples were 95.7%.Freshness decreased on the whole,however,TVBN,total viable counts and pseudomonas counts increased on newly caught,wholesale and retail sale stages.Gram negative bacteria were dominated bacteria on above 3 kinds of samples,reached 75.4%,72.8%and 87.5%,respectively.Bacteriological species of newly caught fish was complex,20 species bacteria were detected,mainly including Enterobacteriaceae,Pseudomonas spp.,Shewanella putrefaciens,Stenotrophomonas maltophilia and Micrococcus rose and so on.The composition of bacterial species became gradually simple during wholesale and retail sale stages,17 and 11 species bacteria were detected,mainly including Acinetobacter spp.Shewanella putrefaciens,Pseudomonas spp.and Psychrobacter spp.,which can be survived and grown,the percentage of above bacteria were high.
