利用海蟹下脚料的酶水解产物制备天然调味品

【摘要】 通过单因素和响应面试验优化确定了中性蛋白酶水解的条件,单因素和正交试验优化确定了混合酶水解海蟹下脚料的条件,然后对混合酶水解海蟹下脚料的产物进行喷雾干燥处理和制备成天然调味品并测定其理化指标。结果表明中性蛋白酶的水解条件为料水比1:3、加酶量4.0%、pH 6.5、50℃、5 h;混合酶的水解条件为料水比1:3、加酶量3.5%、pH 6.0、55℃、7 h、中性蛋白酶:风味蛋白酶:木瓜蛋白酶为1:2:1。利用水解液分别制备成液体和半固体调味品,液体调味料的糖度为36%、盐度为17.14g/100mL、氨基态氮为0.57g/100mL;半固体调味料的糖度为20%、盐度为8.66g/100mL、氨基态氮为0.36g/100mL。对水解液进行喷雾干燥处理得到白色粉末,得率为10.44%。

【Abstract】 Use crab offal as material,with three hybrid enzymes which is neutral protease,papain and flavourzyme for hydrolysis,degree of hydrolysis for the indicators used to study the best conditions for hydrolysis,and then use hydrolyzate prepared condiments.The best conditions by neutral protease for enzymatic hydrolysis were confirmed by single factor and response surface experiments and the best conditions by mixed protease for enzymatic hydrolysis were confirmed by single factor and mating test,and then make crab offal hydrolysis use mixed protease,and then use hydrolysis to spray drying and prepare spices that should measure their physical and chemical indicators.The results show that:the best conditions of neutral protease for hydrolysis were water and material ratio 1:3,the dosage of enzyme 2.5%,pH6.5,50℃,reacting for 5 hours;the best conditions of mixed protease for hydrolysis were water and material ratio 1:3,the dosage of enzyme 3.5%,pH6.0,55℃,reacting for 7 hours,neutral protease:flavourzyme:papain = 1:2:1.Using hydrolysis liquid to prepare two spices which are semi-solid and liquid,semi-solid at 20%of sugar content,salinity for 8.66g/100mL,amino-N for 0.36g/100mL;the sugar content of liquid is 36%, salinity for 17.14g/100mL,amino-N for 0.57g/100mL.The hydrolyzate after spraying drying is white and with a rate of 10.44%.
