A Novel Synthesis Cysteine Schiff Base: The Next Generation of Canarium Album Fresh Keeper

【摘要】 Tyrosinase(EC 1.14.18.1) is the key enzyme of browning in certain fruits and vegetables atthe time of postharvest handling, and is considered to be deleterious to the color qualityof their derived foods and beverages. Canarium Album also is called Chinese olive and ithas a very high economic and practical value. But the fresh Canarium Album is easy tobrowning and hard to store. Hence, it is important to search a potent and safe CanariumAlbum Fresh Keeper. p-Ethlybenzaldehyde cysteine schiff base(ECS) was firstly synthesizedand established by 1H NMR and 13 C NMR. The ECS’s purity is 98% and the synthesisproductive rate is 75.3%. The ECS can inhibit the diphenolase acitivty of mushroom tyrosinase.The IC50 value was determined to be 0.735 μM, and the inhibitory type was found tobe mix-typed with KI of 0.213 μM and KIS of 0.472 μM. Furthermore, the fresh Canariumfruit which was treat with 20μM ECS can store longer as 120 days than control. Throughthe transmission electron microscope(TEM) and bacteriostatic test, the result shown thatthe ECS can effectively protect Canarium fruit from browning and bacteria invasion. Theacute toxicity result suggested that the ECS is completely non-toxic. Cysteine schiff basecan lead new generation of Canarium Album fresh keeper: Effective and Non-toxic.
