CO发色对罗非鱼片冷藏期间细菌菌相的影响

【摘要】 分析CO发色处理罗非鱼片冷藏过程中细菌的变化情况,并对发色处理与否的鱼片细菌菌相进行定性和定量研究,通过反向接种研究CO发色处理对鱼片致病微生物的影响。结果表明:CO发色处理对可明显抑制好氧菌的生长,使发色鱼片冷藏过程中好氧菌较未发色鱼片低约1~2个数量级。冷藏初期发色处理对厌氧菌起到一定的抑制作用,但冷藏6天后发色鱼片厌氧菌数量增加幅度高于未发色鱼片。发色鱼片冷藏过程中优势菌为柠檬酸杆菌,未发色鱼片的优势菌为希瓦氏菌,革兰氏阴性菌比革兰氏阳性菌对CO发色处理更为敏感。金黄色葡萄球菌在发色鱼片中生长速度快,大肠杆菌和沙门氏菌在未发色鱼片中生长速度快。本实验揭示了CO发色处理对罗非鱼片细菌变化情况的影响,为评价CO发色鱼片安全性提供参考依据。
【Abstract】 The qualitatively and quantitatively of bacteria changes during freezing storage was studied.Specific strains reversely vaccinated to tilapias were adopted to evaluate the effect of color retention with CO on strains growth.The results showed that CO treatment could inhibit the growth of aerobic bacteria more effectively than that of anaerobic bacteria with 1~2 magnitude.Anaerobic bacteria were inhibited with CO color retention during beginning of freezing storage,while growth of anaerobic bacteria were higher in tilapia with CO retention treatment after freezing storage of 6 d.Special spoilage organisms in freezing storage were Citrobacter for CO treated tilapia and Shewanella for tilapia untreated with CO.Gram-negative bacteria was more sensitive to CO treatment than gram-positive bacteria.Growing of Staphyloccocus aureus rosenbach in CO treated tilapia was faster,while E.coli and Salmonella in untreated tilapia was faster.
