面制食品中铝含量的测定与评价
Determination and Evaluation of Aluminum Contents in Flour Products

【摘要】 目的:了解学校及周边地区面制食品中铝的污染情况,并以此来评估学校及周边人群可能从食物摄入铝的情况和相关的健康风险。方法:采集集体食堂、面包屋及学校周边早餐店、超市在制造和加工过程中怀疑加入含铝食物添加剂的各种面包、糕点、油条、虾片、包子等食品样本,按GB 5009.182-2003《面制食品中铝的测定》中的铬天青S-分光光度法检测铝的含量,卫生评价按GB2762-2005《食品中污染物限量标准》铝≤100mg/kg判为合格进行。结果:共检测330件面制食品,合格285件,总合格率86.36%,铝含量为<0.5-255.1mg/kg。其中集体食堂、小食店和超市自制的馒头、包子、油条中铝含量超标最严重,含量范围分别为3.6-255.1,28.0-217.2,7.6-185.8 mg/kg,合格率分别为46.2%、61.1%和35.3%;而其他包装食品如饼干、薯片等的合格率较高。结论:学校及周边地区市售面制食品中铝的污染严重,其安全性并不令人满意,特别是日常早餐的馒头、包子、油条铝超标严重,消费者以及有关部门应给予重视。
【Abstract】 Objective:To find out the pollution of aluminum in flour products of the school and the surrounding areas,as well as to assess the people’s intake of aluminum from food and the associated health risks.Methods:Various breads,pastries,fried fritter,shrimp cracker,buns and other food samples were collected to detect the content of aluminum according to the method of CAS S-spectrophotometry from national standard GB 5009.182-2003"Determination of aluminum in flour products",and health evaluation in accordance with GB2762-2005"Standards of limit pollutants in food"Al≤100 mg/kg were carried out.All the samples were taken from canteens,bread houses and the breakfast shop,supermarket around schools,which might be added aluminum-containing food additives. Results:285 samples were qualified from 330 flour products,and the total qualified rate was 86.36%,and the content of aluminum was < 0.5-255.1 mg/kg.The content of aluminum in the home-made bread,stuffed buns,fried bread stick coming from the canteens,small shops and supermarket was higher than 100 mg/kg,in the range of 3.6-255.1,28.0-217.2,7.6-185.8 mg/kg,as well as the qualified rate was 46.2%、61.1%and 35.3%respectively;The quality of other packaged food such as crackers,potato chips and so on was good. Conclusion:The flour products were polluted by aluminum seriously,and the safety of aluminum in the flour products was not satisfactory in this areas,and the content of aluminum from breakfast home-made bread,stuffed buns,fried bread stick exceeded seriously,and consumers and the related government departments should pay more attention to it.
