显微红外对黑木耳吸湿性的研究

【摘要】 利用博里叶变换显微红外光谱仪对黑木耳的吸湿性及其对结构的影响进行了探讨,结果表明,在低湿度下,水分子簇分解成单个分子并和亲水基团相互作用。在高湿度下,亲水基团吸水达到饱和,水分子重新组合形成水分子簇。黑木耳的多孔结构和凝胶状的果实体是造成极强吸水能力的主要原因。
【Abstract】 The water-uptake mechanism and structural effect of Auricularia auricula-judae have been studied by Micro-FTIR technique.The results showed that water cluster could be broken into single water molecules,which interacted with hydrophilic groups at low RH.However,at high RH,the interaction between water and hydrophilic groups was strongest,so the rest water molecules formed clusters.Ultra-strong water absorbing capacity mainly resulted from holes and gelatinous fruiting bodies.
