【摘要】 目的:了解珠海市餐饮业中面包糕点、米面制品、肉制品、自制冷热饮品、水发制品和火锅汤料等食品中添加非食用物质和滥用食品添加剂现状。方法 :随机抽取各区餐饮店、冷热饮品店、集体食堂制售的食品,依据国家相关检测方法开展项目检测,依据GB 2760-2007《食品添加剂使用卫生标准》和《食品卫生法》相关规定对数据进行评价。结果 :检测各类食品共144份,各类添加剂指标总体检出率为72.22%,超过规定使用限量样品检出率为9.03%,超出使用范围样品检出率为32.64%,超标/超范围项目为合成色素、硝酸盐、铝、苯甲酸、甜蜜素;添加非食用物质样品检出率为2.08%,检出项目为甲醛。结论 :检测样品存在添加剂使用超过国家使用限量标准、超出国标中添加剂允许使用范围、添加非食用物质三种违法情况,应该引起食品生产加工单位和政府监管部门的重视,生产者要守法自律,政府监管部门应加强管理和执法。更多还原

【Abstract】 Objective:To investigate the actuality of foods to add non-food substances and the abuse of food additives in cakes,rice products,meat products,home-made hot and cold drinks,water products and hot soup in the catering.Methods:Foods were collected randomly from restaurants,hot and cold drinks shop and collective canteens in districts. Projects were analyzed based on national standards.Datas estimate based on GB 2760-2007〈Hygienic standards for uses of food additives〉and the relevant proviso of〈Food Sanitation Law〉.Results:144 samples of various types food were detected.The total determinative rate were 72.22%of all kinds of additives.Exceeding the limiting standards determinative rate were 9.03%.Exceeding the scope of standards determinative rate were 32.64%.Over the limiting standards / super scope of the project for the synthesis of pigment,nitrate,aluminum,benzoic acid,sodium cyclamate.The determinative rate of add non-food substances were 2.08%,and the detected project were formaldehyde.Conclusion: Samples exist three kinds of phenomenon which breach of the law:additives use in foods exceeds standards,exceeds the scope of standards,add non-food substances in foods.These should be attention by food production and processing units and the government supervision department.The producer should abide by the law and self-discipline.government supervision department management and law enforcement should be strengthened.更多还原
