不同时期采收的草莓果实抗氧化物质含量和抗氧化活性的变化分析

【摘要】 以‘章姬’和‘0362’为试材,研究了不同时期采收的草莓果实的抗氧化物质含量(总酚、总黄酮)和抗氧化活性(DPPH、TEAC和FRAP值)的动态变化。结果表明,在试验期内,随采收时期的推移,‘章姬’、‘0362’红熟期果实的抗氧化物质含量和抗氧化活性总体上均呈上升趋势;抗氧化物质含量和抗氧化活性在两品种间也存在差异。统计分析表明,草莓果实的总酚和总黄酮含量与抗氧化活性之间存在明显的线性正相关关系,总酚与DPPH、TEAC和FRAP的相关系数分别为0.8228、0.8812、0.8419,总黄酮与DPPH、TEAC和FRAP的相关系数分别为0.6753、0.7098、0.7275,因此,不同时期采收的草莓果实的抗氧化活性的变化与果实酚类物质含量的变化有关。
【Abstract】 A study on the changes of antioxidant compounds content and activities in strawberry fruit during different harvest time were carried out between cultivars‘Akihime’ and‘0362’.The contents of total phenolics,total flavonoids and antioxidant activities(DPPH,TEAC and FRAP value) were determined.The results showed that the total flavonoids,total phenolics and assay of DPPH, TEAC,FRAP of‘Akihime’ and‘0362’ fruit were all significantly increased along with the harvest time,during the period of experiment.The content of antioxidant compounds and antioxidant activities were significantly different between two cultivars.The significantly positive linear relationships were found between the total phenolics content and antioxidant activities(co-relation coefficients for DPPH,TEAC,FRAP were 0.9712,0.9905,0.9782,respectively),and between the total flavonoids and antioxidant activities(correlation coefficients for DPPH, TEAC,FRAP were 0.6753,0.7098,0.7275,respectively).Therefore,the changes of antioxidant activities in strawberry fruit during different harvest time may be attributed to the content of phenolic compounds.
