紫叶矮樱叶片色素稳定性的研究

【摘要】 从紫叶矮樱叶片中提取红色素,并对其理化性质进行了初步研究。结果表明,紫叶矮樱红色素的最大吸收波长为535nm,易溶于水和酸性溶剂,难溶苯等有机溶剂;该色素对温度、食品添加剂及酸性条件较稳定;对光、氧化剂和还原剂较不稳定;8种金属离子中,Na2+、Mg2+、Al3+、Ca2+对色素稳定性和颜色无产生不良影响,而Cu2+、Pb2+、Fe3+Fe2+对色素有明显的破坏作用,并使溶液变为绿色和黄绿色。
【Abstract】 The pigment was extracted from the leaf of Prunus×cistenena pissardii and its physicochemical characterization were studied The results showed that the maximum absorption wavelength of this red pigment was 535 nm,,it can be dissolved in water and acid resolver,but not innon -polar organicsolven;the pigment was stable in different temperature and food additive and acid conditions,while it was unstable to light,oxidants and reductants,Metallic ions Na2+、Mg2+、Al3+、Ca 2+ have no obvious effects on the stability and color,but Cu2+、Pb2+、Fe3+ Fe2+ which was able to turn the pigment intogreen and yellow.had severe disadvantageous effect.
