稳定性同位素稀释GC-MS法测定食品中3-氯-1,2-丙二醇的验证研究

【摘要】 目的验证AOAC 2000.01方法作为国家标准方法的适用性。方法以3-氯-1,2-丙二醇(3-MCPD)的稳定性同位素d5-3-MCPD为内标,采用同位素稀释质谱技术测定食品中3-氯-1,2-丙二醇,并进行酱油、面粉和香肠中添加3-MCPD的回收试验。结果本方法线性、精密度和回收率达到了AOAC 2000.01检测方法的要求,检测食品中3-MCPD的测定限为0.005ng/kg。结论 AOAC 2000 01方法被采纳作为GB/T5009.191-2003的国家标准方法。

【Abstract】 Objective The AOAC 2000.01 method was validated in order to establish Chinese natbnal standard for determination of 3-monochloropropane-l,2-diol(3-MCPD) in foods.Melhods using gas chromatography with mass spectrometric detection and incorporating the using of a deuterated internal standard of 3-MCPD,the recovery test were carried out by fortified 3-MCPD standard in soy sauces,flour and salami.Results Linearity,precision and recovery were complied with the method AOAC2000.01 that was adopted First Action by AOAC International.The limit of detection was 0.005mg/kg.Conclusion AOAC2000.01 was adopted as the Chinese national standard GB/T 5009.191.
