【摘要】 当代食品安全已经不是传统的狭义概念,而是一个包含食品数量安全、质量安全、结构安全的无害并有益于人类身心健康可持续性的广义概念,它是一个涉及人类社会多个领域、多个部门、多个环节的复杂系统。为把动物性食品安全地从生产的源头送达消费者的餐桌上,防止人类食源性疾病,我省必须建立从农田到餐桌的动物性食品安全体系[而从农田到餐桌动物性食品安全体系的建立需要饲料原料和饲料生产企业、畜禽养殖企业、动物性食品加工企业、动物性食品销售企业、动物科学的科研工作者、食品安全行政监督部门、消费者的共同努力]。本文探讨了借鉴国外先进的食品安全管理体系,从制度、供应、技术、消费需求这几个层面来全面建立安徽省从农田到餐桌的动物性食品安全体系。更多还原
