F味精生产企业焦谷氨酸水解工艺优化及HACCP体系建立研究

【摘要】 面对竞争日益激烈的市场环境,外向型生产企业需要解决生产、管理成本过高的问题,以提升自身竞争力。本研究要解决的问题有以下两个,一是针对F味精生产企业味精生产过程中产生的醪母液中焦谷氨酸水解条件优化问题,二是建立HACCP体系提升F味精生产企业管理水平,规范企业管理问题。针对F味精生产企业的具体情况,本研究从以下两方面开展,一是通过正交实验方法优化出F味精生产企业生产过程中产生的特有的醪母液中焦谷氨酸的高温常压加酸水解最佳条件,并将优化出的高温常压水解条件与企业在用的常温加压加碱的水解条件,在实验室环境下以水解液中的谷氨酸的含量为目标做纵向对比实验。二是结合F味精生产企业实际,成立HACCP小组,利用HACCP原理的分析方法,找出CCP点,确定关键限制,制定HACCP计划,并选取体系实施前后一段时间不合格供方的数量、金检器搜集异物数量、针对产品异物的市场投诉案件数量、成品出厂合格率的四组数据进行纵向对比分析,验证F味精生产企业实施HACCP体系的效果。通过研究得到以下结论。(1)通过L9(33)的正交实验分析,优化得出F味精生产企业味精生产过程中产生的100ml醪母液中的焦谷氨酸的最佳常压水解条件为:水解时间2h、水解温度105℃、盐酸30%(v/v)量为60ml,其中盐酸加入量对水解液中对谷氨酸含量的影响最大。将优化出的高温常压水解条件与企业在用的常温加压加碱的水解条件,在实验室环境下以水解液中的谷氨酸的含量为目标进行纵向对比实验,得出本研究优化的水解条件下水解液中谷氨酸含量比F味精厂正在使用的水解方法高出0.23个百分点。(2)运用HACCP原理对F生产企业味精加工工艺进行了危害分析,确定了 2个关键控制点,分别是a原材料验收、b金检,并确定了相应的检验指标、关键限值,制定了预防和纠偏措施,HACCP计划表。对比HACCP体系实施以来相关数据得到,F味精生产企业取消供方比例由0.06%上升到0.44%,上升了0.38个百分点,金检器搜集异物数量增加262.12%,而且针对产品异物的投诉案件为零,成品出厂合格率提升为100%。通过实验室优化出的高温常压加酸的水解条件可以为企业创新工艺流程提供选项,为企业避免了试车所产生成本。应用HACCP管理体系,以预防为主的保证了F味精生产企业生产的质量和安全,可以帮助企业降低了管理成本,还可以取得“同线同标同质”平台的准入资格,为企业开拓国内市场赢得了一张入场券,并为企业发展自主品牌,实现差异化的品牌战略提供了保障。

【Abstract】 Objective:The economic development of our countryHas on a new stage,with the quality which is more important than ever.President XI presented "We will move forward to improve the quality and efficiency of development",and emphasized the important of improving economic growth and efficiency.Now the market environment is not the same as the time before whichHas been gone,so the quality managementHas been the important topic that company subsistence must to do,and the important of product quality will appear.China is one of the product countries of monosodium glutamate,andHas adjusted the strategy from "Accelerate development" to "Sound and fast development".So,reducing environmental protection cost,improving quality and expanding domestic and foreign markets will be the best ways forHigh-polluting industries of monosodium glutamate(MSG),which also are the improvement of F MSG Manufacturing.In order to reach this item,the study will be focus on two aspects.First,according to orthogonal experiment analysis,make the optimal combination of mixed mother liquorHydrolysis,then improve output of monosodium glutamate to reduce environmental protection cost.Second,in order to improve the quality of management and products and avoid incidents of management,Hazard analysis and critical control point(HACCP)will be established,and the results as follows:(1)Orthogonal experiment analysis.The optimal combination ofHydrolysis isHydrolysis temperature of 105℃,mixed mother liquor:30%sulfuric acid of 5:3,and Hydrolysis time of 2h.(2)According to the fundamental theory,and combine with the experience of establish the HACCP system in F MSG Manufacturing,three critical control pointsHave been confirmed,which are raw material,magnetic separation,metal detector test.With index of inspection,key thresholds,preventive and corrective actions,Health and safety systems,etc.Have been established.In order to make sure HACCP system effective,the data from critical control points has been analyzed,and the result shows that HACCP system is the effective and preventive system and can regulate the enterprise management,improve the personnel’s quality awareness,reduce the management cost of F MSG Manufacturing.F monosodium glutamate production enterprises obtained the registration qualification of the same quality platform with the same line.
