【摘要】 油脂是与我们的生活息息相关、最非常重要的营养素之一[1]。为此,食用植物油消费量的多少,已成为衡量一个国家城乡居民生活水平高低的重要标志。本文选取石河子地区2010-2014年五年的比较有代表性的棉籽油、葵花籽油、大豆油三种油脂产品为分析对象,选取黄曲霉毒素、铅、砷、溶剂残留、色泽、水分及挥发物、酸值、过氧化值等几种指标为主要分析指标,通过数据分析,掌握了几种油脂的主要指标变化趋势;并将几种主要指标值与国家油脂标准值进行比较,较为全面的衡量石河子地区油脂产品质量,提出了存在的主要问题,最终提出了石河子地区油脂产品提高的主要措施和对策。通过研究得出以下主要结论:1.五年来油脂产品的指标与国标标准值比较,黄曲霉毒素均未检出,其他指标未出现超标现象;2.个别的油脂产品中出现溶剂残留量不稳定,甚至有升高现象,这与产品加工脱除溶剂的工艺相关;3.通过分析发现石河子地区的油脂产品品种比较单一,有待于多元化开发。更多还原

【Abstract】 Oil is one of the most important nutrients in our daily life. To this end, the amount of edible vegetable oil consumption has become an important symbol to measure the living standards of urban and rural residents in a country. This paper selects Shihezi 2010-2014 five years more representative of cottonseed oil, sunflower oil,soybean oil three oil products as the analysis object, selected Aspergillus flavus toxin, lead, arsenic, residual solvents, color, moisture and volatile volatiles, acid value, peroxide value of several indicators for the major indicators of analysis,through the analysis of the data, master of the several lipids changes of main indexes of trend; and several main index values and compared to the value standard of national oil and more comprehensive measure in Shihezi area oil product quality, puts forward the main problems, and finally puts forward some measures and policies of improving oil products in Shihezi area. The main conclusions of the study are as follows:1 Five years of oil products and the standard value of the national standard, aflatoxin are not detected, other indicators did not appear to exceed the phenomenon;2 Individual oil products in the residual solvent residual amount is not stable, and even have an increase in the phenomenon, which is related to the process of product removal solvent;3 Through the analysis of the Shihezi region of the oil product variety is relatively simple, to be diversified development.更多还原
