高压静电场对采后绿芦笋生理特性影响的研究

【摘要】 本论文从“蔬菜之王”-绿芦笋现有采后贮藏保鲜技术的制约条件,以及高压静电场对采后呼吸跃变型果蔬苹果、番茄和非呼吸跃变型果蔬青椒、黄瓜的保鲜机理出发,通过探究绿芦笋采后的生理特性变化,提出高压静电场对采后绿芦笋嫩茎的保鲜具有一定效果的设想。同时,对于提出的这一设想,本论文对采后绿芦笋进行高压静电场处理试验做验证分析。试验内容主要是将采后绿芦笋嫩茎分别置于65KV、75KV的高压静电场中,进行持续性处理15d,然后每隔2d测定其失重率、可溶性糖含量、VC含量、呼吸强度、粗纤维含量、叶绿素含量以及过氧化物酶、多酚氧化酶等反应生理特性的指标。最后将试验数据进行收集、统计和分析,得到结论:采后绿芦笋嫩茎在贮藏期间呼吸跃变,其糖度和叶绿素含量先增后减,有明显的后熟现象。感官评定,处理组和对照组区别甚微;但高压静电场处理的采后绿芦笋嫩茎,后熟程度得到一定延缓;失重率、VC含量、粗纤维含量以及呼吸强度受到相应的抑制;对于POD酶和PPO酶活性,高压静电场处理的采后绿芦笋嫩茎活性总是比对照组更高。因此,高压静电场处理对采后绿芦笋嫩茎的生理特性有一定的影响。
【Abstract】 This paper from the "king of vegetables"- green asparagus existing post harvest storage technology condition, and the high voltage electrostatic field on post harvest fruits and vegetables, tomato, apple respiratory climacteric and non climacteric fruit and vegetable green pepper, cucumber preservation mechanism of green asparagus, by exploring the properties change, the high voltage electrostatic a vision of Post harvest Green Asparagus preservation has a certain effect.At the same time, for this idea, the experiment on this paper verified the analysis. The test is the main content of the high voltage electrostatic field of Post harvest Green asparagus spears were placed in the 65 KV, 75 KV, 20 d for treatment, then every 2D to determine the water loss rate, soluble sugar content, VC content, respiration rate, the crude fiber content, chlorophyll content and peroxidase, polyphenol oxidase reaction and physiological characteristics indexes.Finally, the test data collection, statistics and analysis, get the conclusion: Post harvest green asparagus tender stem respiration jump during storage, the sugar and chlorophyll content increase after decreases first, have apparent after cooked. Sensory evaluation, treatment group and the control group the difference effect; But the high voltage electrostatic field treatment after mining green asparagus tender stem, get a delay after ripening degree; Weightlessness rate, VC content, crude fiber content and respiration intensity by corresponding inhibition; For the POD and PPO enzyme activity, high voltage electrostatic field treatment of post harvest green asparagus tender stem activity is always higher than the control group. Therefore, HVEF intensity on the physiological characteristics of Post harvest Green Asparagus have a certain influence.
