赖氨酸和消化能水平对荣昌猪胴体品质及ADD1和胰岛素受体表达的影响

【摘要】 为研究日粮赖氨酸和消化能水平对荣昌猪胴体品质及ADD1和胰岛素受体基因表达的影响,试验选用96头荣昌阉公猪(20±2)kg,当试验猪平均体重达到60 kg和90 kg时进行屠宰。结果表明:在60 kg屠宰点时,赖氨酸与消化能比值升高,荣昌猪胴体斜长显著降低(P < 0.05),屠宰后1 h的pH极显著增加(P < 0.01),肌内脂肪含量显著降低(P < 0.05);消化能与赖氨酸和消化能比对胴体斜长互作显著(P < 0.05)。在90 kg屠宰点时日粮消化能水平提高,荣昌猪的料肉比显著(P < 0.05)降低;荣昌猪背膘厚显著(P < 0.05)增加,失水率显著降低(P < 0.05),24 h时的pH值也有增加的趋势(P > 0.05);随着赖氨酸与消化能比的增加,1 h和24 h的pH值均显著增加(P < 0.05),肌内脂肪含量显著降低(P < 0.05),眼肌面积有增加的趋势(P > 0.05),并且消化能水平和赖氨酸与消化能比值存在交互作用。当荣昌猪重复平均体重为60 kg时,消化能升高,肝脏、肌肉和脂肪三种组织中ADD1的表达没有显著变化,但有下降的趋势;赖氨酸和消化能比(Lys/DE)升高,三种组织中ADD1的表达也无显著变化,但其交互作用在脂肪组织中差异显著(P < 0.05);消化能升高,肌肉中胰岛素受体的表达显著升高(P < 0.05),而脂肪组织中胰岛素受体的表达显著降低(P < 0.05),赖氨酸和消化能比(Lys/DE)比升高,肝脏中胰岛素受体的表达显著升高(P < 0.05),交互作用在肌肉组织中差异极显著(P < 0.001)。当荣昌猪重复平均体重为90 kg时,消化能升高,脂肪和肝脏中ADD1的表达显著降低(P < 0.05),而脂肪组织中胰岛素受体的表达则显著升高(P < 0.05);赖氨酸和消化能比(Lys/DE)升高,脂肪和肝脏中中ADD1的表达显著降低(P < 0.05)和(P = 0.059),脂肪和肝脏中胰岛素受体的表达显著升高(P < 0.05)。

【Abstract】 Ninety-six Rongchang barrows (20±2) kg were used to determine the effects of dietary digestive energy (DE) and Lysine levels on the carcass and meat quality and the expression of ADD1 and insulin receptor. When the average body weight (BW) of a pen reached 60 kg and 90 kg, one pig per pen was selected and slaughtered for carcass and pork measurements with the left side of each carcass. The results showed that the feed over gain ratio was decreased (P < 0.05), average backfat depth was increased (P < 0.05) and water loss was decreased (P < 0.05) when Rongchang barrows were fed with increasing dietary DE. Meat pH value significantly increased after slaughtered 1 h and 24 h (P < 0.05), and the intramuscular fat contents decreased with the increasing ratio of Lysine:DE (P < 0.05). When the average body weight (BW) of a pen reached 60 kg, The results showed that the expression of ADD1 in liver、muscle and fat tissues didn’t change when Rongchang barrows were fed with increasing dietary DE, but the expression of insulin receptor in muscle significantly increased (P < 0.05) and decressed (P < 0.05) in fat tissue.With increasing ratio of Lysine:DE, the expression of insulin receptor in liver significantly increased (P < 0.05). When the average body weight (BW) of a pen reached 90 kg, the expression of ADD1 in fat and liver significantly decreased (P < 0.05) with increasing dietary DE, and the expression of insulin receptor in fat tissue increased (P < 0.05). The expression of ADD1 significantly decreased (P < 0.05) and the expression of insulin receptor increased (P < 0.05) with increasing ratio of Lysine: DE.
