【摘要】 成都水井街酒坊遗址是中国发现的第一例白酒酿酒作坊遗址，是研究白酒历史起源及传统酿酒工艺的重要实物，被誉为“白酒酿造工艺的一部无字史书”。2001年，水井街酒坊遗址被国务院公布为全国重点文物保护单位。本论文以水井街古酒坊、制酒遗址和周边环境为研究对象，在当代国际文化遗产保护理论的指导下，通过研究水井街古酒坊及环境的历史变迁，归纳总结了水井街酒坊遗址的考古成果，调查分析了其文化遗产保护现状，对文化遗产的价值与构成内涵进行了再探讨和再认识，并确定了保护规划的目标和原则对文物保护的范围、建设控制地带、物质及非物质遗产保护措施等一系列关键性问题进行了系统的研究。更多还原

【Abstract】 Chengdu Swellfun liquor workshop site is discovered as the first case of Chinese liquor history area. Swellfun Site is the important physical material for studying the liquor’s origin and history. The site is considered as "a historic book of Chinese liquor". In 2001, it became the country units of culture heritage.The dissertation research is about Swellfun liquor workshop sites and the environment. Taking the international cultural heritage conservation theory as basement, with reviewing Swellfun liquor workshop and its environmental history, after studying the archaeological materials of Swellfun liquor workshop and researching the status of its site and environment, the cultural heritage value and inner meaning of Swellfun site are re-evaluated and re-discussed. The aims and principles of conservation plan are determined. Meanwhile, the research on the scale for protecting heritage and the district for controlling construction, and the methods of tangible and intangible heritage protection have been studied based on a systemic program.更多还原
