低酸度酒精阳性乳乳牛体内微量元素与抗氧化指标的变化

【摘要】 为了研究低酸度酒精阳性乳的发病机理,本课题全面检测了酒精阳性乳患牛全乳、乳清和血清中多种矿物元素含量,同时检测了血清和乳清中各种抗氧化指标及酶的活性变化;重点分析了血清、乳清和全乳中微量元素含量变化与自由基的代谢特点,以及微量元素代谢与抗氧化体系的关系,探讨了酒精阳性乳患牛乳腺组织自由基代谢特点与组织损伤的关系。试验结果如下:1.分析全乳中常量矿物元素的总量,结果表明酒精阳性乳中总钙(Ca)和总镁(Mg)的含量显著高于(P<0.05)正常牛乳中的相应含量,其中Mg的升高幅度更大(P<0.01);而总钠(Na)和总钾(K)的含量显著降低(P<0.05),以Na的下降幅度更大(P<0.01)。分析乳清中各种元素离子状态的相应含量,结果显示:酒精阳性乳患牛乳清中Ca和Na的含量显著高于正常乳清中的相应含量(P<0.05),但Mg和K的含量无显著差异(P>0.05)。同时,酒精阳性乳患牛乳清中无机磷(P)和氯离子(Cl-)的含量与正常乳清的相应含量无显著差异(P>0.05)。对比正常乳和阳性乳中阴阳离子总和,发现阳性乳中离子平衡紊乱、电荷增多使牛乳胶体聚沉能力较强而导致酒精阳性乳的形成。2.分析血清、全乳以及乳清中锌(Zn)、铜(Cu)、锰(Mn)、铁(Fe)的含量,发现酒精阳性乳患牛血清中Zn和Cu的含量显著降低(P<0.05),而Mn、Fe的含量无显著差异(P>0.05);全乳中Zn、Cu、Mn的含量显著降低(P<0.05),以Zn、Mn的下降幅度较大(P<0.01),而Fe的含量极显著升高(P<0.01);乳清中Zn、Cu含量显著降低(P<0.05),而Fe的含量亦显著升高(P<0.05)。试验结果表明:酒精阳性乳患牛体内的微量元素代谢紊乱,对机体抗氧化有利的Zn、Cu、Mn含量降低而能增强活性氧毒性作用的Fe含量升高;这种变化对机体的抗氧化系统是不利的,会进一步导致抗氧化酶的活性降低、毒性产物含量升高而使自由基代谢平衡失调。
【Abstract】 Concentrations of many kinds of mineral elements、variations of many kinds of anti-oxidation indexes and activities of enzymes in the milk、whey and serum of dairy cows suffered from alcohol positive milk(APM) were detected in order to study the mechanism how APM was secreted. Contents of trace elements in the serum and milk(whey)、the metabolism of free radicals and the relationship between the metabolism of microelement and the system of anti-oxidation are studied emphatically. The relationship between the metabolism of free radicals in the mammary gland of cows with APM and its injury are discussed also. The result is reported as follows:1.The result showed that contents of total calcium(Ca) and total Magnesium (Mg)in APM are significantly higher than those in the negative milk(P<0.05) and the change of Mg is greater(P<0.01);While concentrations of total sodium (Na)、total potassium(K) decreased significantly(P<0.05)and the difference of Na is significant(P<0.01). Based on the result in the whey of cows with APM,concentrations of Ca、Na are significant higher than those in the negative whey(P<0.05); Contents of Mg、K、Inorganic phosphorus(P) and chloridion (Cl-)have no remarkable difference(P>0.05).Compared with anions and cations in the positive and negative milk,it is clear that the balance of ions in APM is in disorder and the number of electric charge is increasing,which make the colloid of milk precipitate easily. Finally it leads to the production of APM.2.According to the experiment,it is clear that contents of Zn、Cu in the serum of cows suffered from APM decreased significantly (P<0.05)and those of Mn、Fe have no remarkable difference(P>0.05);Contents of Zn、Cu、Mn in the milk
