静电场对菜豆、青椒和茄子冷害的作用及生理生化影响

Effect of Electrostatic Field on Chilling Injury of Kidney Bean, Green Pepper, Eggplant and Its Physiological Change

【摘要】 静电场处理能降低5℃下菜豆和2℃下青椒的冷害指数、降低相对电导率以及MDA含量,减缓低温对于细胞膜的伤害,抑制了冷害,同时,静电场对菜豆的锈斑指数也有降低,但青椒的腐烂率无影响;而对于贮藏于2℃下的茄子,静电场不能减轻其冷害,但能降低茄子贮藏后期的相对电导率和MDA含量。静电场处理也能减轻4℃下菜豆的冷害和锈斑的发生,降低相对电导率和MDA含量,减小膜透性。静电场处理能抑制贮藏于冷害温度下菜豆的呼吸,并延缓可溶性蛋白的下降,提高菜豆抗氧化酶系SOD和POD活性,增强清除活性氧的能力,从而提高机体对冷害的抗性。 对不同电场及贮藏条件下,静电场处理对菜豆冷害的影响发现,贮温为4℃时,-140kV/m~-200kV/m场强的静电场对于减少菜豆冷害指数、锈斑指数和失重率有最好效果;静电场对不同温度贮藏的菜豆冷害规律的研究表明,贮藏温度越低,冷害发生越严重,锈斑随贮藏温度的降低而加重,4℃下,静电场抑制冷害的发生最为显著;不同电场方向静电场处理都能减轻菜豆的冷害,减缓膜透性的增加,负电场处理对于减轻冷害更显著,并能有效的减轻电解质的渗漏,保护细胞膜。在7℃的贮藏适温下,静电场对于菜豆具有减少腐烂率和锈斑指数的作用,起到了保鲜的效果。

【Abstract】 Chilling injury index, relative electronic conductivity and MDA content of kidney bean and green pepper storage at 5℃ and 2℃ respectively were decreased with treatment of electrostatic field, peroxide degree and damage of membrane was reduced as well. Surface rust index of kidney bean was decreased by electrostatic field, but the rotten ratio of green pepper was no differentia. But as to eggplants of storage at 2℃, chilling injury hasn’t be reduced by electrostatic field. Chilling injury and surface rust of kidney bean was reduced with electrostatic field when storage at 4℃, damage of membrane and respiration rate was restrained, and decline of soluble protein content was delayed with the treatment of electrostatic field. On the other hand, SOD, POD activity of the antioxidase enzyme was increased by electrostatic field, it boost up the ability of eliminating active oxygen species, thus enhances the chilling injury defense of vegetable.Different intensity electrostatic field could reduce chilling injury of kidney bean differently at 4℃, and that when the intensity is between -140kV/m~-200kV/m can obtain the best result of chilling injury index, surface rust index, weight loss. According to the study of effect of electrostatic field on chilling injury of kidney bean at various temperature(2℃, 4℃, 6℃), the lower temperature of storage, the worse of chilling injury and surface rust. Different temperature has different effect at the reduction of chilling injury caused by electrostatic field. Minus Electrostatic field has better effect of reduce chilling injury of kidney bean. Storaged at 7 ℃, electrostatic field can reduce rotten ratio and surface rust index of kidney bean; it indicated that electrostatic field has the effect of kidney bean preservation.
