“湿冷系统”在热带果蔬保鲜中的应用研究

【摘要】 本课题是国家科委“97火炬计划”—“湿冷系统”在果蔬保鲜中的应用研究的一部分。在国内外同类研究的基础上,本文主要围绕臭氧的操作规程的制定、臭氧与湿冷库的协同作用、荔枝、龙眼、芒果、杨桃、菠菜等热带果蔬在湿冷库中的贮藏性能,贮期生理的变化规律,湿冷库空载性能的测试,湿冷库的进一步完善等问题。实验取得了预期的效果。 实验结果表明:臭氧水和臭氧对果蔬有良好的杀菌效果,它有效控制霉菌的产生,抑制果蔬中酶的活性,较好地起到了护色、预冷的作用;“湿冷系统”提供了低温高湿的贮藏环境,对热带果蔬有很好的贮藏效果,它较好地保持了果蔬的营养、品质和风味。适于热带果蔬的贮藏保鲜。本课题的研究也为湿冷系统在国内的进一步推广和应用提供了理论依据。
【Abstract】 This paper is one part of projectr "A study of the htunidcool system in thepreservation of Fruits &Vegetables which is included in the "97 National sciencecommittee torch plan ". On the basic of the research home &abroad achievements,the studies on the establishmeni of ozone operate rules, on the functions of ozone inhumidcool system and on the physiological characteristics of litchi. longan. Averrhoacarambola. mango\ spinach and other fruits stored in the lHumidcool System werecarried ollt. Besides, the works includes the physiological characteristics of fruits&vegetables stored in the humidcool system and the test of free-burden.The results show that the sterilization effects toproduce pretfeated by ozone or byozonized water are obvious and the mould on the fruits & vegetables is wellcontrolled, treatment of ozone and ozonized water can diminish the enzymelivingness \ protecting colors and used to precool fruits &vegetables, The notritionand quality and nice flavor produce in the Humidcool system with the condition oflow temperature and high relative humidity are retained better, The development ofthe prOject will give the basis for the popularization & aPplication of the humidcoolsystem.
