基于TPA法3个早熟甜樱桃品种贮藏期间果实质地变化分析

【摘要】 通过分析不同贮藏时间下甜樱桃质地结构变化,对不同早熟甜樱桃品种的耐贮性进行评价,为确定贮藏时间和最佳食用时间提供理论依据。采用质地多面分析(TPA)测试法,以早熟甜樱桃品种红灯、早大果和五月红果实为试材,分析了其采后果实在不同贮藏时间的质地变化。结果显示:随着贮藏时间的延长,3个早熟甜樱桃品种果实硬度、弹性和咀嚼性均呈先上升后下降的趋势,且在同一贮藏时间,五月红果实各项参数值均明显高于红灯和早大果;3个早熟甜樱桃品种果实的内聚性变化较为平缓,且品种间差异不明显;3个早熟甜樱桃品种好果率逐渐降低。相关性分析表明,甜樱桃果实硬度、弹性与咀嚼性均呈极显著正相关,内聚性与咀嚼性相关性不显著;五月红果实内聚性与硬度呈极显著负相关,与弹性呈极显著正相关。3个早熟甜樱桃品种在0~2℃冷库贮藏7 d后,其好果率和果实硬度、弹性、内聚性、咀嚼性均随贮藏时间延长而下降。因此,建议在0~2℃贮藏条件下,早熟甜樱桃品种的适宜贮藏期不宜超过7 d。

【Abstract】 By analyzing the changes in the texture and structure of sweet cherries under different storage times,the storage tolerance of different early-maturing sweet cherry varieties was evaluated to provide a theoretical basis for determining the storage time and the best time for consumption. Using the texture profile analysis(TPA) test method, the fruits of early-maturing sweet cherry varieties ‘Hongdeng’, ‘Zaodaguo’ and ‘Wuyuehong’ were used as test materials to analyze the texture changes of the post-harvest fruits at different storage times. The results showed that with the extension of storage time, the hardness, elasticity and chewiness of the fruits of the three early-maturing sweet cherry varieties all showed a trend of increasing first and then decreasing, and at the same storage time, the values of various parameters of ‘Wuyuehong’ fruits were significantly higher than those of‘Hongdeng’ and ‘Zaodaguo’; the change in the cohesiveness of the fruits of the three early-maturing sweet cherry varieties was relatively gentle, and there was no significant difference among the varieties; the good fruit rate of the three early-maturing sweet cherry varieties gradually decreased. Correlation analysis showed that there was a very significant positive correlation between the hardness, elasticity and chewiness of sweet cherry fruits, and the correlation between cohesiveness and chewiness was not significant. There was a very significant negative correlation between the cohesiveness and hardness of ‘Wuyuehong’ fruits, and a very significant positive correlation between the cohesiveness and elasticity. After the three early-maturing sweet cherry varieties were stored in a cold storage at 0-2 ℃ for 7 days, their good fruit rate and the hardness, elasticity, cohesiveness and chewiness of the fruits all decreased with the extension of storage time. Therefore, it is recommended that under the storage condition of 0-2 ℃, the suitable storage period of early-maturing sweet cherry varieties should not exceed 7 days.
