罗布麻叶多酚色素的结构及稳定性
Structure and stability of polyphenolic pigments extracted from Apocynum venetum L. leaves
【摘要】 采用超声辅助乙醇提取罗布麻叶多酚,经紫外光谱与FT-IR鉴定色素主要成分为黄酮类物质;探究了酸碱度、温度、光照、氧化剂(H2O2)与还原剂(Na2S2O4)对色素稳定性的影响。结果表明:色素在酸性至中性环境、80℃以下及短时间光照时保持稳定,并对H2O2表现出良好耐受性;然而在强碱、高温(>80℃)、长时间光照(>1 d)及还原剂存在的条件下,稳定性显著降低。
【Abstract】 Polyphenols extracted from Apocynum venetum L. leaves using ultrasound-assisted ethanol are identified as flavonoids via UV spectro meter and FT-IR. The pigment′s stability is evaluated under various conditions(pH, temperature, light, oxidants and reductants). The results show that the pigment remains stably in acidic to neutral conditions, at temperatures below 80 ℃ and under short-term light exposure, and exhibits good tolerance to H2O2. However, its stability significantly decreases under strong alkaline conditions, at high temperatures(>80 ℃), under long-term light exposure(>1 d), and in the presence of reductants.
