基于熵权-TOPSIS法评价干燥方式对山药片品质的影响

【摘要】 为确定适宜铁棍山药的干燥技术,采用气体射流冲击干燥(Air impingement drying,AID)、微波联合热风干燥(Microwave combined with hot air drying, MW-HAD)、红外联合热泵干燥(Infrared combined heat pump drying, IR-HPD)、热风干燥(Hot air drying, HAD)、真空冷冻干燥(Vacuum freeze drying, VFD)5种干燥方式处理山药片,测定其干燥时间、灰分、明亮度、复水比、浸出物含量、尿囊素含量和薯蓣皂苷元含量指标,并采用熵权-TOPSIS法进行综合评价。结果表明:AID组干燥时间最短为130 min,其水分有效扩散系数最大为7.13×10–8 m2/s;MWHAD干燥速率呈现先升高后降低的趋势;VFD组明亮度L*值最高达到95.73,其次为AID组;不同干燥方式下山药片复水比差异显著(P<0.05),VFD和AID组复水性最好;VFD组山药片浸出物含量最高为5.91%,其次是AID组为5.88%;5种干燥方式下尿囊素含量和薯蓣皂苷元含量差异不显著(P>0.05)。熵权-TOPSIS法综合评价值排序由大到小依次为AID>VFD>HAD>IR-HPD>MW-HAD,可选用AID作为山药片的首选干燥方式。

【Abstract】 In order to select the suitable drying technology for the slices of iron stick yam,five drying technologies were used to dry yam slice,including air impingement drying(AID),microwave combined with hot air drying(MW-HAD),infrared combined heat pump drying(IR-HPD),hot air drying(HAD) and vacuum freeze drying(VFD).In this experiment,drying time,ash,brightness,rehydration ratio,extract content,allantoin content and diosgenin content were determined and the entropy weight-TOPSIS method was used for comprehensive evaluation.The results showed that the shortest AID time was 130 min,and its maximum effective water diffusion coefficient was 7.13×10-8 m2/s.The MW-HAD drying rate showed a trend of increasing first and then decreasing.The VFD group brightness L* value reached 95.73,followed by AID group.There was significant difference in rehydration ratio among different drying methods(P<0.05),VFD and AID groups had the best rehydration.The extract content of yam tablets in VFD group was the highest(5.91%),followed by AID group(5.88%).There was no significant difference in allantoin and diosgenin contents under five drying methods(P>0.05).The comprehensive evaluation ranking of entropy weightTOPSIS method was AID>VFD>HAD>IR-HPD>MW-HAD.AID could be chosen as the preferred drying method for yam slices.
