食用菌硒多糖的制备方法、形成途径及生物活性研究进展
Research Progress on Preparation Methods, Formation Pathways, and Bioactivities of Selenium Polysaccharides from Edible Mushrooms
【摘要】 食用菌硒多糖是硒与多糖结合的一种有机硒化合物,兼具硒和多糖的双重生物活性。因其具有抗肿瘤、抗氧化、抗病毒以及免疫调节等多种生物活性,在功能食品和生物医药等领域有广阔的应用前景。文章综述了食用菌硒多糖的2种制备方法——生物富集法与化学合成法,并对其形成途径及生物活性的研究进展进行了归纳和总结,以期为食用菌硒多糖的深入研究和开发利用提供参考。
【Abstract】 Selenium-polysaccharides from edible mushrooms are organic selenium compound formed by the combination of selenium and polysaccharides, integrate the dual biological activities of both selenium and polysaccharides. Due to their diverse biological activities, including antitumor, antioxidant, antiviral, and immunomodulatory effects, they exhibit broad application prospects in functional foods and biomedicine. This article reviews two preparation methods of selenium-polysaccharides from edible mushrooms-biological enrichment and chemical synthesis-and summarizes the research progress on their formation pathways as well as biological activities. The aim is to provide references for further research, development, and utilization of selenium-polysaccharides from edible mushrooms.
