食用油料作物致敏蛋白组分的研究进展

【摘要】 食物过敏是儿童常见过敏性疾病,并对过敏患者及其家人的生活产生影响,引起全世界广泛关注。由于食物致敏蛋白组分的来源在植物分类上关系较近,这些致敏蛋白组分在分子结构上具有相似性,它们之间可能会发生交叉反应。食用油料作物内含有丰富蛋白质,广泛出现在日常生活中,增加其接触的机会。致敏蛋白组分诊断可进一步明确过敏患者的致敏蛋白组分蛋白谱,对食物过敏的精准治疗具有重要意义。本文综述了草本油料作物和木本油料作物的致敏蛋白组分特点及其与之相关的交叉反应,并讨论了过敏原蛋白家族在种子油料作物中对过敏的影响。

【Abstract】 Food allergy is a common allergic disease in children and impacts the lives of patients and their families,attracting widespread attention worldwide. Plant foods are ubiquitous in daily life,and allergic reactions to them are mainly caused by their constituent proteins. Owing to the close phylogenetic relationships among plant-derived food allergen components,these allergens may share similarities in molecular structure,leading to potential cross-reactivity. Edible Oilseed crops are rich in proteins and widely present in daily life,thus increasing the risk of allergen exposure. Allergen component-resolved diagnosis can further clarify the protein allergen profiles of allergic patients and is of great significance for the precision treatment of food allergy. In this review,the characteristics of allergen components and their associated cross-reactivity of herbaceous and woody oil crops were summarized,and the influence of allergen protein families in seed oil crops on allergy was discussed.
