【摘要】 为解决传统“食品质量管理学”课程教学中存在的教学内容与实际应用脱节、学生缺乏学习主动性、课程思政融入不足等问题，基于OBE理念对“食品质量管理学”通过反向设计教学目标，从课堂教学模式、实践教学环节、课程思政等方面对教学内容进行改革。在课堂教学模式改革方面，重点探讨了案例教学法、启发式教学法、项目式学习法和个性化学习法的创新应用；在实践教学环节，主要从实验教学优化、企业实习加强、学科竞赛推动3个方面发力；在课程思政改革方面，着重阐述了思政元素的挖掘与融入、教学方法的创新和评价体系的构建。教学实践表明，基于OBE理念的教学改革有效提高了学生的学习积极性和实践能力，提升了课程的教学质量和育人效果，为培养高素质食品质量管理人才提供了新的思路和方法。更多还原

【Abstract】 To address the issues in the traditional teaching of the Food Quality Management course,such as the disconnection between teaching content and practical application,students’ lack of learning initiative,and insufficient integration of ideological and political education,this article proposed a reform of the Food Quality Management course teaching based on the OBE(Outcome-Based Education) concept. The reform involved reverse design of teaching objectives and innovations in classroom teaching models,practical teaching links, and the integration of ideological and political education. In terms of classroom teaching model reform,the focus was on the innovative application of case-based teaching,heuristic teaching,project-based learning and individualized learning. For practical teaching,efforts were concentrated on optimizing experimental teaching,strengthening corporate internships,and promoting academic competitions. Regarding the reform of ideological and political education,the article emphasized the exploration and integration of ideological elements,the innovation of teaching methods,and the construction of an evaluation system. Teaching practice showed that the teaching reform based on the OBE concept effectively enhances students’ learning enthusiasm and practical abilities,improved the teaching quality and educational effectiveness of the course,and provided new ideas and methods for cultivating high-quality food quality management professionals.更多还原
