【摘要】 介绍了人类血压控制系统,尤其是血管紧张素转化酶(ACE)在肾素-血管紧张素-醛固酮系统中对血压调控的重要作用和调控机理;进一步分析了血管紧张素转化酶抑制活性肽(ACEIP)的来源及在降血压应用中的优势,阐述了其作用机制和功能相关的结构特征;并详细介绍了以稻米作为主要原料,通过酶解和发酵法制备ACEIP的方法和研究进展。并对未来可能使用的新技术手段和研究方向进行了展望,为稻米资源的综合利用和功能性降压食品的开发提供参考。

【Abstract】 The human blood pressure control system was introduced, especially the important role and regulatory mechanism of angiotensin-converting enzyme( ACE) in blood pressure regulation in the reninangiotensin-aldosterone system. The source of angiotensin-converting enzyme inhibitory peptide( ACEIP)and its advantages in antihypertensive applications were further analyzed, and its mechanism of action and function-related structural characteristics were expounded. The methods and research progress of preparing ACEIP using rice as the main raw material through enzymatic hydrolysis and fermentation were introduced in detail. It also looks forward to the possible new technological means and research directions that may be used in the future, providing references for the comprehensive utilization of rice resources and the development of functional blood pressure-lowering foods.
