啤酒糟与统糠混合发酵生物饲料品质研究

【摘要】 为解决畜牧业饲料原料供应不足问题、寻找高品质饲料替代途径,试验以啤酒工业最主要副产物啤酒糟作为主要原料、以农业废弃物统糠作为调水物质,设置30%、40%、50%、60%含水量梯度,添加一定比例的枯草芽孢杆菌,在28℃条件下密封发酵15 d。发酵完成后,对饲料进行感官评定,采用国家标准检测方法对饲料pH、粗蛋白、粗脂肪、粗灰分、钙、总磷、氨态氮、产酸情况等指标进行测定。结果表明:随着啤酒糟与统糠混合比例的增加,发酵饲料的感官评分呈现先上升后下降的趋势,其中以50%含水量组的综合评分最高,其色泽、气味及质地均符合优质生物饲料标准;化学分析结果显示,各处理pH为3.5~4.5;粗蛋白含量随发酵条件的优化显著提高,最高达22.68%,粗脂肪、粗灰分、钙及总磷含量均满足畜禽饲料营养需求,氨态氮含量较低。综上所述,将含水量控制在50%~60%、添加1.82%枯草芽孢杆菌,能够提高粗蛋白、粗脂肪、粗灰分、钙、总磷、氨态氮、产酸含量,改善pH,为啤酒糟与统糠混合发酵饲料的最优发酵条件。

【Abstract】 To address the shortage of feed raw materials in animal husbandry and explore high-quality feed alternatives, the experiment was carried out with brewer’s dreg as the main raw material which is the main by-product of the beer industry, and agricultural waste chaff as the water-regulating substance, with the gradient of water content of 30%, 40%, 50% and 60%, and a certain proportion of Bacillus subtilis was added, and the feeds were sealed and fermented for 15 d under the condition of 28 ℃. After the fermentation was completed, the feed was subjected to sensory evaluation, and the pH, crude protein, crude fat, crude ash, calcium, total phosphorus, ammoniacal nitrogen and acid production were measured by using the national standard testing methods. The results showed that with the increase of the mixing ratio of brewer’s dregs and united bran, the sensory scores of fermented feed showed a tendency of increasing and then decreasing, among which the 50% water content group had the highest comprehensive score, and its color, odor and texture were in line with the standard of high-quality biofeeds. The results of chemical analysis showed that the pH of each treatment ranged from 3.5 to 4.5. The crude protein content increased significantly with the optimization of fermentation conditions, up to 22.68%. Additionally, crude fat, crude ash, calcium, and total phosphorus levels all met nutritional requirements for livestock and poultry feed, while ammonia nitrogen content remained low. In conclusion, controlling the moisture content at 50% to 60% and adding 1.82% Bacillus subtilis can increase the crude protein, crude fat, crude ash, calcium, total phosphorus, ammonia nitrogen and acid production content, improve pH, and provide the optimal fermentation conditions for the mixed fermentation feed of brewer’s grains and bran.
