肠炎沙门氏菌快速检测技术研究进展

【摘要】 肠炎沙门氏菌是沙门氏菌属中最重要的血清型之一,主要通过受污染的饮用水、食物等传播,与人类食源性疾病密切相关。该菌不仅对畜牧业造成重大经济损失,还会威胁人类健康,严重病例甚至导致死亡。因此,建立快速检测食品中肠炎沙门氏菌的技术对于预防食源性疾病的暴发具有重要意义。论文综述了肠炎沙门氏菌的分子生物学技术、免疫学技术和生物传感器技术等快速检测技术的原理、优势与局限性,探讨了相关领域的研究概况,了解肠炎沙门氏菌快速检测技术的研究现状,为未来肠炎沙门氏菌快速检测技术的开发与应用提供参考。

【Abstract】 Salmonella enteritidis is one of the most important serotypes in the genus Salmonella,which is mainly transmitted through contaminated drinking water,food,etc.,and is closely related to human foodborne diseases.It not only causes significant economic losses to animal husbandry,but also threatens human health,causing serious cases and even death.Therefore,the establishment of a rapid detection technology for Salmonella enteritidis in food is of great significance for preventing the outbreak of foodborne diseases.Based on this,this paper reviews the principles,advantages and limitations of rapid detection techniques such as molecular biology techniques,immunological techniques and biosensor techniques for Salmonella enteritidis,and discusses the latest research progress in related fields,in order to systematically understand the research status of rapid detection techniques for Salmonella enteritidis,and provide new ideas for the development and application of rapid detection techniques for Salmonella enteritidis in the future.
