【摘要】 在消费升级与科技创新的双重驱动下,2025年度我国六大茶类及再加工茶的工艺技术体系正加速向自动化、智能化、数字化方向演进。各大茶类关键工序优化、智能装备应用、风味定向调控及微生物干预等方面的研究取得显著进展,花茶等再加工茶则通过原料适配、机理解析与智能窨制技术创新实现品质跃升。然而,当前茶叶加工仍面临关键装备自主化与智能化不足、工艺数据标准尚待完善、技术装备精准度不高、茶叶风味物质代谢机制解析不足以及人工智能应用风险等瓶颈。未来,茶叶加工将持续聚焦核心技术及装备创新升级、深入解析风味物质定向调控机制、全流程智能化生产线构建、标准化驱动质量安全管控等方面协同创新。

【Abstract】 Driven by both consumption upgrades and technological innovation in 2025,the processing technology systems for China’s six major tea categories and reprocessed teas are accelerating their evolution toward automation,intelligence,and digitalization.Significant progress has been achieved in key process optimization,intelligent equipment application,flavor-oriented regulation,and microbial intervention across the major tea categories.Reprocessed teas,such as scented teas,have achieved quality leaps through raw material adaptation,mechanism analysis,and innovations in intelligent scenting technology.However,tea processing still faces several bottlenecks,including insufficient autonomy and intelligence of key equipment,incomplete process data standards,low precision of technical equipment,inadequate analysis of the metabolic mechanisms of tea flavor substances,and risks associated with artificial intelligence application.In the future,tea processing will continue to focus on collaborative innovation in core technology and equipment upgrades,in-depth elucidation of flavor-oriented regulation mechanisms,construction of fully intelligent production lines,and standardization-driven quality and safety control.
