基于氨基酸含量分析结合化学计量法的鱼胶种类区分
Differentiation of Fish Maw Types Based on Analysis of Amino Acid Content and Chemometrics
【摘要】 为了探究不同种类鱼胶氨基酸组成和含量的差异并进行区分,采用氨基酸分析仪测定5种鱼胶的氨基酸;结合化学计量法建立区分模型,并通过Fisher判别分析构建判别函数。结果表明鱼胶的氨基酸含量丰富,甜味、鲜味、药用氨基酸含量高。主成分分析展现出鱼胶间氨基酸含量的聚类趋势和差异分布,正交偏最小二乘判别分析筛选出的10种特征氨基酸是区分不同品种鱼胶的重要差异性成分,且模型预测能力良好。利用Fisher判别分析构建鱼胶种类鉴别的判别函数,其训练集和测试集的区分准确率分别为100%和93.33%,基本实现了鱼胶种类的区分。因此,氨基酸含量结合化学计量法能够为区分不同种类鱼胶提供一定的参考价值。
【Abstract】 In order to investigate the differences in amino acid compositions and contents of different types of fish maws and differentiate them.Used an amino acid analyzer to determine the amino acid contents of five types of fish maws,combining with chemometrics to establish a model,and construct a discriminant function through Fisher discriminant analysis.Fish maw was rich in amino acids,with high levels of sweet,umami and medicinal amino acids.Principal component analysis showed the clustering trend and differential distribution of amino acid content between them.The 10 characteristic amino acids selected by orthogonal partial least squares discriminant analysis were important differential components for distinguishing different varieties of fish maws,and the model has good predictive ability.Based on discriminant analysis,the discriminant function for identifying fish maw types was constructed.The accuracy of distinguishing between the training set and the test set were 100% and 93.33%,respectively,which basically achieved the differentiation of fish maw types.The combination of amino acid contents and chemometrics can provide certain reference value for differentiate five different types of fish maws.
