气调包装对软枣猕猴桃色泽及抗氧化的影响

【摘要】 研究气调包装对软枣猕猴桃贮藏品质和抗氧化的影响,为软枣猕猴桃果实贮藏包装提供理论依据。文章以软枣猕猴桃新品种‘绿佳人’为试验材料,充入16% O2+2% CO2进行气调包装,于低温(2±0.5)℃贮藏,每隔10 d对软枣猕猴桃内在品质、色泽和抗氧化酶活性进行测定。与对照组相比,随着贮藏时间的增加,气调包装可以显著降低果实的烂果率,延缓果实鲜质量和硬度的下降,显著增加果实的固酸比,极大提高果实的贮藏品质;气调包装可以有效延缓L*值、叶绿素a和叶绿素b的下降速率,抑制类胡萝卜素和褐变程度的增加,从而改善果皮亮度,维持果皮色泽;同时提高了超氧化物歧化酶、过氧化氢酶、抗坏血酸过氧化物酶和过氧化物酶的活性,延缓总酚和类黄酮含量的下降,提高了软枣猕猴桃采后抗氧化能力。充入16% O2+2% CO2的气体有效维持了‘绿佳人’软枣猕猴桃的贮藏品质和色泽,可以延长果实贮藏时间,提高其抗氧化能力。

【Abstract】 This study aimed to investigate the impact of modified atmosphere packaging on the storage quality and antioxidant capacity of Actinidia arguta,thereby providing a theoretical foundation for its postharvest storage and packaging strategies.The ‘Lüjiaren’ was utilized as the experimental material,with a gas mixture of 16% O2 and 2% CO2 introduced into the modified atmosphere packaging.The fruits were stored under low-temperature conditions,and assessments of internal quality,color attributes,and key antioxidant enzyme activities were conducted every 10 days.Compared with the control group,as the storage time increased,modified atmosphere packaging could significantly reduce the rotten fruit rate,delay the decline in fresh weight and firmness of the fruit,significantly increase the solid-acid ratio of the fruit,and greatly improve the storage quality of the fruit.Modified atmosphere packaging could effectively slow down the decline rate of L* value,chlorophyll a and chlorophyll b,inhibit the increase of carotenoids and browning degree,thereby improving the brightness of the peel and maintaining the color of the peel.At the same time,it enhanced the activities of superoxide dismutase,catalase,ascorbate peroxidase and peroxidase,slowed down the decline in total phenols and flavonoids content,and improved the postharvest antioxidant capacity of fruit.The gas composition of 16% O2 plus 2% CO2 effectively maintained the storage quality and color of ‘Lüjiaren’ Actinidia arguta,enabling an extension of the fruit’s storage time and enhancing its antioxidant capacity.
