高含量不饱和脂肪酸油脂微胶囊的理化性质及体外缓释研究

【摘要】 研究高含量不饱和脂肪酸油脂粉末微胶囊的理化性质及体外缓释性能。以核桃油为芯材,以明胶、β-环糊精、阿拉伯树胶粉为复合壁材,采用喷雾干燥法制备得到微胶囊,对其形貌、性质及缓释性能进行测试与表征。结果表明:制得的微胶囊呈不规则圆形,粒径大多在200~500 nm范围内;包裹后的微胶囊中不饱和脂肪酸含量为31.07%±0.35%,理化性质符合乳制品营养成分的质量要求; 60 min体外缓释性能试验中,核桃油在模拟胃、肠液中的缓释机制分别呈Ritger-Peppas释放模型和Higuchi释放模型,胃、肠液中的累积释放率分别为80.95%和98.52%,肠液中释放速度快于胃液,符合人体消化吸收特点。试验方法能较全面反映高含量不饱和脂肪酸油脂微胶囊的特性,有望为其在乳制品中的应用提供参考。

【Abstract】 Study the physicochemical properties and in vitro sustained-release performance of high content unsaturated fatty acid oil powder microcapsules. Microcapsules were prepared by the spray drying method, using walnut oil as the core material, and gelatin, β-cyclodextrin and arabic gum powder as composite wall materials, and the morphology, properties and sustained-release performance of the microcapsules were tested and characterized. The results showed that the prepared microcapsules were irregularly circular in shape, with particle sizes mostly within the range of 200-500 nm, and were nano level microcapsules; The content of unsaturated fatty acids in the encapsulated microcapsules was 31.07%±0.35%, and their physicochemical properties met the quality requirements for the nutritional components of dairy products. In the in vitro sustained-release performance test within 60 min, the sustained-release mechanism of walnut oil in simulated gastric and intestinal fluids followed the Ritger Peppas release model and Higuchi release model, respectively. The cumulative release rates in gastric and intestinal fluids were 80.95% and 98.52%, respectively, and the release rate in intestinal fluid was faster than that in gastric fluid, which fit the characteristics of human digestion and absorption. The method can comprehensively reflect the characteristics of high content unsaturated fatty acid oil microcapsules, and can provide reference for their application in dairy products.
