枸杞干果微生物污染状况研究
Research on the Microbial Contamination in Dried Wolfberry Fruits
【摘要】 目的:了解甘肃、青海、宁夏市售枸杞干果中的微生物污染状况。方法:2020—2024年,分别在甘肃、青海、宁夏采集市售枸杞干果样品共计100份,依据相关国家标准方法检测枸杞中大肠菌群、霉菌、沙门氏菌、金黄色葡萄球菌和大肠埃希氏菌O157:H7。结果:在100份枸杞干果样品中,大肠菌群、霉菌的不合格率分别为28.00%和51.00%,且散装枸杞干果的污染程度高于预包装样品;所有样品中均未检出沙门氏菌、金黄色葡萄球菌和大肠埃希氏菌O157:H7等致病菌。结论:甘肃、青海、宁夏市售枸杞干果中的微生物污染以大肠菌群和霉菌为主;鉴于霉菌对枸杞品质的影响较大,建议在枸杞干果的质量控制与微生物污染监测中加强对霉菌的关注。
【Abstract】 Objective: The paper aims to understand the microbial contamination status of dried wolfberries sold in Gansu, Qinghai, and Ningxia markets. Method: From 2020 to 2024, a total of 100 samples of commercially available dried goji berries were collected in Gansu, Qinghai, and Ningxia. According to relevant national standard methods, coliforms, molds, Salmonella, Staphylococcus aureus, and Escherichia coli O157:H7 were detected in goji berries. Result: Among 100 samples of dried wolfberries, the unqualified rates of coliform bacteria and mold were 28.00% and 51.00%, respectively, and the contamination level of bulk dried goji berries was higher than that of pre packaged samples; no pathogenic bacteria such as Salmonella, Staphylococcus aureus, and Escherichia coli O157:H7 were detected in all samples. Conclusion: Microbial contamination in commercially available dried wolfberries in Gansu, Qinghai, and Ningxia is mainly caused by coliform bacteria and mold. Given the significant impact of mold on wolfberries quality, it is recommended to strengthen attention to mold in the quality control and microbial contamination monitoring of dried wolfberries.
