藜麦蛋白提取工艺的研究进展
Advances in Research on Quinoa Protein Extraction Technology
【摘要】 藜麦因其优质的蛋白质含量和广泛的氨基酸组成而受到越来越多的关注,本文旨在探索简单高效的藜麦蛋白提取方法,为藜麦蛋白产品的研发应用提供科学依据。根据目前研究进展对藜麦蛋白各类提取方法,如碱溶酸沉法、酶辅助提取法、超声波辅助碱法提取、盐溶法等进行对比分析。结果表明,目前的提取方法普遍存在着提取率不高,提取污染较大等问题,这在很大程度上限制了藜麦蛋白的研发应用,因此仍需不断改进提取工艺,研发出适合藜麦蛋白的简单高效的分离纯化方法。
【Abstract】 Quinoa has attracted increasing attention for its high-quality protein content and diverse amino acid composition. Simple and efficient methods for extracting quinoa protein are investigated to provide a scientific foundation for the research and development of quinoa protein products. Recent advancements in various extraction methods, including alkali extraction-acid precipitation, enzyme-assisted extraction, ultrasonic-assisted alkali extraction, and salt extraction, are systematically reviewed and analyzed. Common challenges in current methods, such as low extraction efficiency and significant environmental impact, limit the application and development of quinoa protein. Therefore, optimizing extraction techniques and developing efficient separation and purification methods for quinoa protein are urgently needed.
