【Abstract】 Astragalus membranaceus is an important traditional Chinese medicinal materials with extensive pharmacological activities and clinical application value. In November 2023, the National Health Commission of China issued an announcement to include Astragalus membranaceus in the catalogue of substances of dual purpose as food and medicine, which has accelerated the development of the Astragalus industry. With the continuous development of food and medicine dual-purpose products and the rapid advancement of microbial fermentation technology, probiotic-fermented Astragalus membranaceus has become a hot research area in the modernization of food and medicine dual-purpose substances. This article systematically reviews the latest research progress on probiotic-fermented Astragalus membranaceus, including its mechanism of action, fermentation strains and characteristics, optimization of fermentation processes and application prospects. By analyzing existing research results, this paper aims to provide theoretical references for in depth research and industrial development of probiotic-/fermented Astragalus membranaceus.更多还原
