茶浸取液对亚硝酸盐的清除作用
Clearing Effect of Tea Extract on Nitrite
【摘要】 测定了固液比1:50~1:400(g∶mL)的系列单枞茶浸取液和相同浓度的单枞茶、绿茶、红茶浸取液对NaNO2的清除效果。结果表明:单枞茶浸取液对NaNO2清除比随浓度的减小而减小,且浓度越小,清除NaNO2达到平衡所需的时间越长。相同浓度不同类型的茶叶浸取液对NaNO2清除能力不同,单枞茶浸取液对NaNO2的清除比为435.2μg·g-1,绿茶为421.4μg·g-1,红茶为351.1μg·g-1(浸取液的浓度均为0.0114 g·mL-1),但达到最大清除比所需的时间均约为60 min,本研究旨在为饮茶方式提供有益的参考。
【Abstract】 The removal effect of NaNO2 by a series of Dancong tea extract solutions with a mass to volume ratio concentration of 1:50 ~ 1: 400( g ∶ mL) and the same concentration of Dancong tea,green tea,and black tea extract solutions was determined. The results showed that the NaNO2 scavenging ratio of the Dancong tea extract decreased with decreasing concentration,and the lower the concentration,the longer the time required to reach equilibrium for NaNO2 scavenging. Different types of tea extract solutions with the same concentration had different NaNO2 scavenging abilities. The scavenging ratio of Dancong tea extract solution to NaNO2 was 435.2 μg·g-1,green tea was 421.4 μg·g-1,and black tea was 351.1 μg·g-1( the concentration of the extract solution was 0.011 4 g·mL-1),but the time required to reach the maximum scavenging ratio was about 60 minutes,this study aims to provide a useful reference for teu dninking methods.
