处理浓香型原酒的活性炭选型分析研究
Selection of Activated Carbon for Processing Nongxiang Crude Liquor
【摘要】 本研究通过全面比较不同厂家、不同型号活性炭在处理浓香原酒时的工艺参数,确定了最佳备用活性炭型号。采用活性炭吸附后常温过滤法进行过滤处理,并以浊度和感官评分作为研究指标,研究了活性炭添加比例、处理时间、处理温度三个因素以及它们之间的相互作用对过滤效果的影响。结果表明,将浓香型原酒降度至42%vol时,活性炭的最佳过滤工艺参数是添加1.0‰的活性炭、处理时间为24 h、处理温度为30℃,在此最佳工艺下,浊度为0.01 NTU,平均感官评分为91.5。
【Abstract】 This study comprehensively compares the process parameters of different types of activated carbon from different manufacturers in the treatment of Nongxiang crude liquor, and determines the optimal type of backup activated carbon. The study uses activated carbon adsorption plus roomtemperature filtration to treat the crude liquor. With turbidity and sensory score as the indicators, the effects of the activated carbon proportion, the treatment time, the treatment temperature, and their interaction on the filtration efficiency are studied. The results show that when reducing the alcohol content of the crude liquor to 42 %vol, the optimal process parameters are as follows: 1.0 ‰ activated carbon, treatment at 30 ℃ for 24 hours. Under the above conditions, the turbidity of the crude liquor is 0.01 NTU, and the average sensory score is 91.5.
