响应面法优化超声提取莜麦多酚及其生物活性分析

【摘要】 为研究莜麦中多酚的提取及其抗氧化作用,以山西神池莜麦为原料,通过超声辅助提取法高效提取莜麦多酚并对其生物活性进行系统研究。结果表明:最佳提取条件为超声功率320 W、超声时间40 min、料液比1∶40(g/mL)、超声温度52℃,在此条件下测得多酚得率为4.03 mg/g。生物活性试验结果表明,莜麦多酚相较于抗坏血酸对ABTS自由基有很强的清除能力,并且总还原能力明显高于抗坏血酸,其对DPPH自由基和羟基自由基的IC50分别为4.31 mg/L和2.24 mg/L。

【Abstract】 To investigate the extraction of polyphenols from naked oats and their antioxidant activity, Shenchi naked oat from Shanxi was used as the raw material to efficiently extract naked oat polyphenols through ultrasound-assisted extraction, and their biological activities were systematically studied. The results showed that the optimal extraction conditions were ultrasonic power 320 W, ultrasonic time 40 min, material-to-liquid ratio 1 ∶40(g/mL) and ultrasonic temperature 52 ℃. Under these conditions, the polyphenol yield reached 4.03 mg/g. The results of biological activity tests showed that compared with ascorbic acid, naked oat polyphenols exhibited significantly stronger scavenging capacity against ABTS free radicals, and their total reducing ability was significantly higher than ascorbic acid. The IC50 for DPPH free radicals and hydroxyl free radicals were 4.31 mg/L and 2.24 mg/L, respectively.
