稻谷缓苏干燥工艺关键参数优化试验

【摘要】 针对传统干燥后稻谷裂纹率较高、稻谷品质无法得到保证的问题,探究缓苏温度、缓苏比、稻谷初始含水率等工艺参数对稻谷裂纹增率、干燥速率影响及缓苏工艺抑制稻谷干燥性裂纹的机理。采用三元二次正交旋转组合设计优化稻谷缓苏干燥工艺参数,以缓苏温度、缓苏比、稻谷初始含水率为试验因素,使用Box-Behnken试验,建立回归模型并分析各因素与试验指标之间的关系。使用Design-Expert 12软件对试验结果进行参数优化及数据分析,得出最优工艺参数:缓苏温度为57℃,初始含水率为23%,缓苏比为2.4∶1。在此组合参数下稻谷裂纹增率为9.53%,干燥速率为0.104%/min,且相对误差较小。研究表明,经优化后组合参数对降低稻谷裂纹增率、提高干燥速率有着积极的作用,可为实际生产提供理论基础。

【Abstract】 In order to reduce the crack rate of rice after drying and improve the drying efficiency of rice, this experiment explored the effects of technological parameters such as retarding temperature, retarding ratio and initial moisture content of rice on the crack growth rate and drying rate of rice, and the mechanism of retarding technology to inhibit drying cracks of rice. The technological parameters of rice slow-tempering drying were optimized by three-dimensional quadratic orthogonal rotation combination design. Taking slow-tempering temperature, slow-tempering ratio and initial moisture content of rice as experimental factors, Box-Behnken test was used to establish a regression model and analyze the relationship between each factor and the experimental indicators. The Design-Expert 12 software was used to optimize the parameters and analyze the data of the test results, and the optimal process parameters were obtained as follows: the retarding temperature was 57 ℃, the initial moisture content was 23%, and the retarding ratio was 2.4∶1. Under these combined parameters, the rice crack growth rate is 9.53%, the drying rate is 0.104%/min, and the relative error is small. The results show that the optimized combination parameters have a positive effect on reducing the crack growth rate and improving the drying rate of rice, which can provide a theoretical basis for practical production.
