饲粮中添加黑水虻对茶花鸡2号屠宰性能和肉品质的影响

【摘要】 试验旨在研究饲粮中添加不同水平黑水虻(BSF)对茶花鸡2号屠宰性能和肉品质的影响。选用60日龄茶花鸡2号360只,随机分为4组,每组3个重复,每个重复30只鸡,分别按0、20、40、60 g/只饲喂黑水虻鲜样。除黑水虻的添加量不同外,各组均饲喂基础饲粮。结果表明:与对照组相比,各试验组鸡的胫围、盆骨宽均显著增加(P<0.05),胫长均显著减少(P<0.05);60 g BSF组的宰前体重、放血后重、翅膀重、头重均显著增加(P<0.05),腿肌率显著降低(P<0.05);20 g BSF组的肝脏重、肺脏重、性腺重均显著减少(P<0.05),40 g BSF组的肾脏重、腹脂重显著增加(P<0.05),性腺重显著减少(P<0.05),60 g BSF组的腹脂重显著增加(P<0.05),肺脏重显著减少(P<0.05);20 g BSF组胸肌的蒸煮损失显著降低(P<0.05),腿肌的蒸煮损失、剪切力均显著降低(P<0.05);40 g BSF组腿肌的蒸煮损失、系水力均显著降低(P<0.05),肌肉黄度显著升高(P<0.05)。综上,饲粮中添加20 g/只黑水虻对茶花鸡2号的体尺性状、屠宰性能和肉品质有显著影响,可提升综合性能。

【Abstract】 This experiment studied the effects of adding different levels of black soldier fly(BSF) to the diet on slaughter performance and meat quality of Chahua Chicken No. 2. A total of 360 sixty-day-old Chahua Chicken No. 2 chickens were randomly divided into four groups with three replicates per group and 30 chickens per replicate. They were fed with 0, 20, 40 g/bird and 60 g/bird of fresh BSF respectively. All groups received the same basal diet except for the BSF supplementation. The results showed that: compared with the control group, all treatment groups had significantly increased shank girth and pelvic width(P<0.05), and significantly decreased shank length(P<0.05). The 60 g BSF group showed significantly increased live weight before slaughter, weight after bleeding, wing weight and head weight(P<0.05), and significantly decreased percentage of leg muscle yield(P<0.05). The 20 g BSF group had significantly decreased liver weight, lung weight and gonads weight(P<0.05). The 40 g BSF group showed significantly increased kidney weight and abdominal fat weight(P<0.05), and significantly decreased gonads weight(P<0.05). The 60 g BSF group had significantly increased abdominal fat weight(P<0.05) and significantly decreased lung weight(P<0.05). For meat quality, the 20 g BSF group showed significantly decreased cooking loss in breast muscle, and cooking loss and shear force in leg muscle(P<0.05). The 40 g BSF group showed significantly decreased cooking loss and water holding capacity in leg muscle(P<0.05), and significantly increased yellowness(P<0.05). In conclusion, adding 20 g/bird of BSF to the diet significantly affected body size traits, slaughter performance and meat quality of Chahua Chicken No. 2, and could improve overall performance.
