γ-聚谷氨酸生物学功能的研究进展

【摘要】 γ-聚谷氨酸(γ-PGA)是由谷氨酸残基通过γ-肽键连接而成的高分子多肽,具有可食用、安全、抗冻性好和抗氧化性强等特点,被广泛用于食品工业、医药行业及农业。新型饲料的发展对畜牧业至关重要,推动γ-PGA的应用对缓解畜牧业饲料原料短缺或单一的现状具有重要意义,且γ-PGA的生物学功能的相关报道相对缺乏。因此,基于γ-PGA的生物学特性,文章就γ-PGA对动物营养物质吸收利用、脂肪酸代谢机理及抗氧化方面等进行了拓展,以期弥补γ-PGA作为饲料添加剂的空白,为新型饲料的开发及利用提供理论基础。

【Abstract】 Gamma-Polyglutamic acid(γ-PGA) is a high-molecular-weight polypeptide formed by glutamic acid residues linked through γ-peptide bonds, possessing characteristics such as being edible, safe, highly freeze-resistant and strongly antioxidant, thus widely used in the food industry, pharmaceutical industry, and agriculture. The development of new feeds is crucial to animal husbandry. Promoting the application of γ-PGA is of great significance for alleviating the current situation of shortage or singularity of feed raw materials in animal husbandry, and there are relatively few reports on the biological functions of γ-PGA. Therefore, based on the biological characteristics of γ-PGA, this article expands on its effects on the absorption and utilization of nutrients in animals, mechanisms of fatty acid metabolism and antioxidant properties, aiming to fill the gap in γ-PGA′s use as a feed additive and provide a theoretical foundation for the development and utilization of new feeds.
