【摘要】 马克斯克鲁维酵母(Kluyveromyces marxianus)是一种广泛存在于乳制品和自然环境中的食品安全级酵母菌,具有生长快、耐高温、广谱碳源利用性等特征。近年来在食品生物技术产业受到广泛关注,是一种具有工业应用优势的新型工业底盘细胞。本文根据马克斯克鲁维酵母的相关文献,综述了其来源、益生功效以及在食品发酵等工业中的应用。同时,本文对马克斯克鲁维酵母的专利信息进行了总结,阐述了其作为细胞工厂在工业生物技术产业应用领域的发展趋势。

【Abstract】 Kluyveromyces marxianus, a food-safe yeast species widely found in dairy products and natural environments, exhibits distinctive characteristics, including rapid growth, thermotolerance, and the ability to utilize a broad range of carbon sources. In recent years, K.marxianus has gained significant attention in food biotechnology as a novel industrial chassis cell with strong application potential. This review synthesizes its origins and probiotic efficacies, as well as its applications in food biotechnology, such as fermentation based on current literatures about K.marxianus. Furthermore, we conduct patent analysis to identify emerging trends in its applications as a microbial cell factory in industrial biotechnology.
