3种坚果脱油工业副产物的生物利用、活性分析及其潜在应用

【摘要】 坚果粕是原料经过榨油后得到的工业副产物。坚果粕水解物具有多种功能特性,但在应用过程中经常由于坚果粕为工业副产物而使其水解物也被忽视。目前,坚果粕主要用于加工成动物饲料或在垃圾填埋场被处理。坚果粕富含蛋白、碳水化合物和纤维,可分别用于生产生物活性肽、生物燃料和膳食纤维等,这些应用较将其用于生产动物饲料具有更大的应用价值。文章通过生物利用策略分析,主要探讨了从3种坚果(杏仁、核桃和腰果)油脂加工过程中副产物的再利用途径,总结了坚果粕提取多种化合物的应用方法,阐述了以不同种类坚果粕为基料,采用酶解和发酵技术制备肽组分的生物活性、安全性及其潜在应用,旨在为坚果脱油工业副产物再利用提供理论参考。

【Abstract】 Nut residue is the industrial byproduct obtained from raw materials after oil extraction. The hydrolysate of nut residue has various functional characteristics. The application is often overlooked due to the industrial byproducts. Currently, nut residue is mainly used for processing animal feed or for disposal in landfills. Nut residue is rich in protein, carbohydrate and fiber, can be used to produce bioactive peptides, biofuels and dietary fiber, respectively. These applications have greater value than using it to produce animal feed. Through the analysis of biological utilization strategies, in this paper, the ways to reuse the by-products from the processing of three kinds of nuts(almond, walnut and cashew) were mainly explored, the application methods of extracting multiple compounds from nut residue were summarized, and the biological activity, safety and potential application of peptide components prepared from different kinds of nut meal by enzymolysis and fermentation technology were expounded to provide theoretical references for the reuse of nut de-oiled byproducts.
